Ruby Quimby

Ruby I. Quimby, 88, of Willmar, passed away Monday, December 24 at her home.

Funeral services will be 1:30 p.m. Saturday, December, 29, at First Presbyterian Church in Willmar. Interment will be at Roseville Cemetery in Hawick. Visitation will be 5-7 p.m. Friday, December 28, at the church and one hour prior to the service. Funeral arrangements are by Peterson Brothers Funeral Home in Willmar. In lieu of flowers, Ruby asks that memorials be made to: First Presbyterian Church in Willmar, the Willmar Cancer Center and Rice Hospice.

Ruby Irene (Brooks) Quimby was born on December 25, 1923 to Mabel (Gatewood) and Edward Brooks in Willmar. She grew up and received her education in the Belgrade schools. She married Ersie Quimby on July 26, 1943 in New London. She spent her life raising her family of 9 children and operating and managing a variety of restaurants in and around the Willmar and Belgrade areas. Her faith and church were important to her and she was a life time member of the First Presbyterian Church Women's organization. In retirement, she and her husband enjoyed traveling throughout the United States and Canada to sight see and visit family and friends. Ruby loved a challenging crossword puzzle, attending auctions, working in her flower gardens and in their large vegetable and raspberry gardens with her husband and kids and producing a large crop for all to enjoy. She was an exceptional cook and baker and her friends and family enjoyed many homemade meals, cookies, pastries, cakes and pies. She and her husband were also known for making the best lefse around. She loved being surrounded by her family and especially enjoyed having the little ones sit on her lap.

She is survived by her devoted husband of 69 years, Ersie; their 9 children - Bruce (and Pam) Quimby of Willmar, Audrey (and Jerry) Pientka of Reno, NV, Steven (and Darla) Quimby of Atwater, Calvin (and Dorothy) Quimby of Spicer, David (and Kim) Quimby of Spicer, Deb (and Chuck) Grunwald of Willmar, Tim Quimby of Milwaukee, WI, Joel Quimby of Big Lake, and Jody (and Terry) Fernholz of Pennock; 19 grandchildren and their spouses and 18 great grandchildren. She is also survived by her sister, Bernice (John) Jacobs of Willmar, her sisters-in law, Beaulah (and Warren) Peterson of Cross Lake, Joyce (Roy) Quimby of Whitefish, MT and many beloved and devoted nieces and nephews, besides other relatives and friends.

She was preceded in death by her parents, 3 brothers, Gene (Elsie), Bennie (Dorothy) and Duane, 2 sisters, Bessie (Ole) Isdahl and Dorothy (Vernon) Tofte and by one grandson, Matthew Quimby. (www.petersonbrothers.com)
